Tender and flavorful chicken set on a bed of fluffy rice makes for the perfect comfort meal!

Ingredients

  • 4 bone in chicken thighs

  • 1 onion chopped

  • 3 tbs butter, diced in small pieces

  • 1 1/2 cup white rice

  • 1 3/4 cups chicken broth

  • 1 cup water

  • Canola oil (spray)

  • Frozen peas and carrots

  • 1 tbs minced garlic

  • Your favorite chicken seasoning

Directions

  • Preheat the oven to 350 degrees
  • Start by dicing up an onion and sautéing it in the 3 tbs of butter. Cook until onions are slightly brown and translucent.
  • While the onions are sweating, dry your chicken thighs with a paper towel. Then you will want to liberally season your chicken with your favorite chicken seasoning.
  • In a casserole dish add in the rice, chicken broth, water, minced garlic, onions, and 3/4 a bag of frozen peas and carrots and mix them all together. Once that’s mixed evenly, place your thighs evenly spaced in your casserole dish.
  • Cover with aluminum foil and bake for 40 minutes covered. After the 40 minutes, remove the aluminum foil and spray the chicken with your canola oil. Allow chicken to cook another 20-25 minutes uncovered, or until the chicken and rice are cook through.
  • Remove and allow to rest for 10 minutes to prevent the chicken from drying out. Then serve with your favorite salad or side dish!
